Easy Seasonal Recipe: Baked Citrussy Rhubarb    

There’s a glut of rhubarb in the allotment at the moment. Rhubarb stalks are super-low in calories, so I feel justified adding a sprinkle of brown sugar to counteract the tartness. It contains lots of fibre, a good amount of Vitamins C and K, as well as some trace minerals. Enjoy rhubarb whilst it’s in season, and for a change try roasting it, it looks absolutely gorgeous and tastes sublime.

- 800 grams fresh rhubarb stalks, washed and cut into inch long pieces
- 3 oranges, peeled and broken into segments, you can also use clementines / grapefruit or a mix.
- Handful strawberries, washed and hulled (optional)
- Brown sugar to taste, use at least a dessert spoon at the end to glaze.METHOD
- Preheat oven to 180 degrees C.
- Place all ingredients in an oven-proof dish or baking tray. Cover, you can use foil if there’s no lid.
- Bake on the middle shelf of the oven for 30 minutes.
- Uncover, sprinkle with some brown sugar and return to the oven for 10 minutes or until browned (see photo).
- Serve with natural yoghurt or crème fraiche.

Introducing the Friendly Fitness Forum

Having worked in the fitness industry for over a decade, I realised that outside of social media, there is little in the way of conversation between fitness and health professionals locally. Many of us who run our own studios tend to be caught up in the day to day demands of running a business and miss out on the social banter and discussion with like-minded professionals.

So I have set up the Friendly Fitness Forum in Edinburgh. It’s a platform for fitness and well-being workers (including massage therapists, personal trainers, health food shops etc) to meet up and exchange ideas. We had our first meet-up in April and the next one is coming up in June. A dozen or so of us meet informally upstairs at Akva, a child and dog-friendly venue at the end of the Union canal. At the moment the group is invite-only as it is establishing and we want to ensure it is utilised for the exchange of ideas, rather than sales pitches.
